S'mores Cookies

What are S’mores Cookies?


Introducing S’mores cookies complete with brown butter dough, graham cracker bits, chocolatey morsels, and a marshmallow center.


These S’mores cookies can be interesting to put together but once you get the hang of it you’ll be doing it in your sleep!


How to put S’mores cookies together


  1. Using a 1-ounce cookie scoop, scoop out enough dough to completely fill the scoop.


  1. Use your finger or thumb to press a cavity into the center of the scoop 

Tip: poke a small hole at the bottom so the marshmallow can poke through


  1. Place half a marshmallow in the center cavity and close the excess dough around it


  1. Place the scoop on a prepared cookie tray 


What you need for S’mores Cookies


Brown butter adds such a depth of flavor to this delicious S’mores cookie. If you struggle to make brown butter there are videos on the internet that can help!


Melted butter


Brown sugar is essential to these cookies, they add flavor and a good texture to these S’mores cookies.


Granulated sugar


1 egg


1 egg yolk, adding an extra egg yolk to cookies gives them an extra chewy factor.


Vanilla extract


Salt


All-purpose flour


Baking soda


Chocolate chips


Graham crackers


Marshmallows

Ingredients

  • ½ cup butter (browned)
  • 2 tbsp butter (melted)
  • ¼ cup brown sugar
  • ¾ cup granulated sugar
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla
  • ¼ tsp salt
  • 1 ¼  cups all-purpose flour
  • 1 tsp baking soda
  • ¾ cup chocolate chips
  • 4 sheets graham crackers (broken into small chunks)
  • 9 marshmallows (halved) mini marshmallows work too

Instructions

  1. Line a tray with parchment paper.
  2. In a pan brown the butter and set aside, melt 2 tablespoons butter as well.
  3. In a mixing bowl combine the flour, salt, and baking soda, set aside.
  4. In a medium-sized mixing bowl add the butter and sugars together, once fully combined add 1 egg, 1 egg yolk, and vanilla extract mix until fully incorporated. 
  5. Add in the dry mixture into the wet mixture and mix until there are no more flour streaks in the dough. Cover with plastic wrap and let it cool in the refrigerator until slightly below room temperature.
  6. Fold in the chocolate chips and graham cracker bits until evenly distributed.
  7. Using a 1-ounce cookie scoop, scoop out the cookies and then use your thumb, create a cavity in the middle of the dough, place a halved marshmallow inside and then release from the cookie scoop, roll together until the marshmallow is fully covered place on the prepared pan spacing each cookie about two inches apart. Repeat this process until all of the dough is gone. Refrigerate for 30 minutes to 1 hour.
  8. Preheat the oven to 350° F and bake for 11-13 minutes or until the edges are lightly brown but the center is still gooey. Allow the cookies to cool. enjoy!

I had no expectations for this, except Keep an open mind. This wIll now be staple of fall. It was so, so good. I may experiment next time and add smoked gouda cheese, YUM!!!
