Easy Fluffy and Moist Banana Bread

What you need for the best banana bread

Melted butter creates a moist fluffy banana bread that creates a texture and mouthfeel that is to-die-for. 

Overripe bananas are obviously essential for banana bread, if you want to make banana bread like NOW but your bananas aren’t overripe yet, you can place them in the oven at 300 F for 30-40 minutes until they are fully black and they will be ready for your banana bread dreams.

Granulated sugar

Eggs are a binding ingredient that keeps everything together and is a definite base ingredient for this bread.

Greek yogurt helps with the texture of fluffy banana bread, if you don’t have greek yogurt you can substitute this with buttermilk, which can easily be made at home. This substitution is 1:1.

Vanilla extract

All-purpose flour

Baking soda



How to take your banana bread to the next level

Mix-ins are one of the best ways to take the best banana bread to the next level, here are a few of my favorite mix-in options:

Chocolate chips make everything better if you ask me. Just mix them in and enjoy little pockets of chocolatey goodness in your fluffy banana bread.

Nuts are a great way to add a bit of crunch to your moist banana bread. A few of my favorite nuts to mix in are peanuts, pecans, walnuts, and hazelnuts.

Banana bits can take banana bread to BANANA bread (if you know what I mean). Chopping up some extra bananas into small pieces and mixing them in is a great way to bring an extra texture throughout the best banana bread.

Ways to make your banana bread healthier

Here are a few 1:1 substitutions to make your banana bread healthier

Coconut oil instead of butter

Coconut sugar or monk fruit sugar instead of granulated sugar

Nonfat Greek yogurt instead of regular/full-fat greek yogurt

Almond flour instead of all-purpose flour

  • ⅓ cup butter (melted)
    3 overripe bananas (mashed)
  • ½ cup granulated sugar
  • 2 eggs
  • ½ cup greek yogurt (buttermilk works too)
  • 2 tsp vanilla
  • 1 ½ cup all-purpose flour
  • ¾ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1 banana (sliced lengthwise) for topping
  • Crushed pecans, for topping


  1. Preheat the oven to 350° F and butter a bread pan, set aside.
  2. In a bowl mash the bananas fully, add in the sugar, eggs, butter, yogurt, and vanilla extract.
  3. In a separate bowl combine the flour, baking soda, salt, and spices. Fold this dry mixture into the wet mixture and mix just until there are no more flour streaks. Pour the batter into the prepared bread pan, top with desired toppings.
  4. Bake at 350° F for 45 minutes or until you can insert a toothpick and it comes out clean. Let the bread cool completely. Enjoy!

this is a great recipe

I had no expectations for this, except Keep an open mind. This wIll now be staple of fall. It was so, so good. I may experiment next time and add smoked gouda cheese, YUM!!!
